There are only two groups of people in the world - those who drink instant coffee every day and don't give a damn about it, and then those who wouldn't even smell it. Instant coffee is divisive, but it's good to know something about it.

The fact is that although instant coffee is more than gold for preparing such a tiramisu, due to its taste, structure and ability to dissolve, the drink itself will never have as a distinctive taste as freshly ground beans. But let's face it - how many of us know what instant coffee actually is? It's been with us for over a hundred years, so maybe it's time we all finally found out.

It is important to note that instant coffee is really made from real coffee beans. These are first roasted and ground, similarly to ordinary ground coffee. Afterwards, the coffee is and brewed immediately. In order to create instant coffee, all water must then be removed from this "broth". Only the dehydrated coffee crystals that you buy in the store will remain.

There are 2 ways to dehydrate brewed coffee - spray drying and freeze drying. With spray drying, the liquid coffee concentrate is sprayed in tiny mist-like drops into very hot and dry air (we are talking about a temperature of just over 248°C) . Before it hits the ground, the water evaporates and the coffee dries into small round crystals.

Freeze drying involves several steps. As with spraying, the coffee is first brewed to create an extract. It then cools down to approximately 93°C. The resulting mass is then further cooled on a belt, drum or tray to -40°C until it forms sheets of ice. The coffee ice is crushed into granules that are sent to a drying vacuum, where the ice sublimates and only instant coffee granules remain.

As you can see, instant coffee is not as bad as those who do not allow coffee from a moka pot or a professional pressure coffee maker to say. This is a product made from real coffee beans, but much more processed. It is the perfect helper when baking desserts or in the summer when preparing iced coffee or frappé. However, its taste characteristics will never compare to freshly ground coffee, and you have to pay attention to the manufacturer, because just like with bean or ground coffee, you can find better quality, lower quality but still good coffee, and also those that you would rather not even drink .
